Olive oil is a liquid fat ;obtained from olives (the fruit of Olea europaea; family Oleaceae), a traditional tree crop of the Mediterranean Basin, produced by pressing whole olives and extracting the oil. It is commonly used in cooking, for frying foods or as a salad dressing. It is also used in cosmetics, pharmaceuticals, and soaps, and as a fuel for traditional oil lamps, and has additional uses in some religions.

DEFINITION
Olive Oil is the refined fixed oil obtained from the ripe fruit of Olea europaea L. (Fam. Oleaceae). It may contain suitable antioxidants.

IDENTIFICATION
A. Identity by Fatty Acid Composition. To pass the test.
B. Identity by Triglyceride Profile. To pass the test.

Alkaline Impurities:
Sample: 10 mL of Olive Oil
Analysis: Mix 10 mL of freshly opened acetone and 0.3 mL of water and add 0.05 mL of bromophenol blue. Add the Sample, shake, and allow to stand. Titrate with 0.01 N hydrochloric acid VS to change the color of the upper layer to yellow.
Acceptance criteria: NMT 0.1 mL of 0.01 N hydrochloric acid is required.

DEFINITION
Fatty oil obtained by cold expression or other suitable mechanical means from the ripe drupes of Olea europaea L.

CHARACTERS
Appearance: Clear, transparent, yellow, or greenish-yellow liquid.
Solubility: Practically insoluble in ethanol (96 per cent), miscible with light petroleum (bp: 50-70C). When cooled, it begins to become cloudy at 10C and becomes a butter-like mass at about 0C.
Relative density: About 0.913.
IDENTIFICATION
Identification: of fatty oils by thin-layer chromatography: To pass the test.
Absorbance: Maximum 0.20 at 270 nm. The ratio of the absorbance at 232 nm to that at 270 nm is greater than 8.
To 1.00 g add cyclohexane and dilute to 100.0 mL with the same solvent.
Acid value: Maximum 2.0, determined on 5.0 g.

Fatty oil obtained by refining of crude olive oil, obtained by cold expression or other suitable mechanical means from the ripe drupes of Olea europaea L. A suitable antioxidant may be added.

CHARACTERS
Appearance: Clear, colourless or greenish-yellow transparent liquid.
Solubility: Practically insoluble in ethanol (96 per cent), miscible with light petroleum (bp: 50-70C). When cooled, it begins to become cloudy at 10C and becomes a butter-like mass at about 0C.
Relative density: About 0.913.
