Calcium propanoate or Calcium propionate Ca(C2H5COO)2 is the calcium salt of propanoic acid.
Calcium Propionate, (CH3CH2COO)2Ca, is an effective inhibitor of the growth of certain moulds and some bacteria and it is applied as a preservative in dairy products. It is listed as a food additive with E number 282. Calcium propanoate is used as a preservative in a wide variety of products, including bread, other baked goods, processed meat, whey, and other dairy products. In agriculture, it is used, amongst other things, to prevent milk fever in cows and as a feed supplement. Calcium propanoate is used in bakery products as a mold inhibitor, typically at 0.1-0.4% (though animal feed may contain up to 1%). It also becomes a source of Calcium in such food products. It is also used as a fungicide on fruit.

DEFINITION
Calcium Propionate contains NLT 98.0% and NMT 100.5% of calcium propionate (C6H10CaO4), calculated on the anhydrous basis.
IDENTIFICATION
A. A solution of Calcium Propionate (1 in 20) imparts a transient yellowish red color to a nonluminous flame.
Limit of Fluoride: To pass the test. NMT 30 µg/g
Limit of Lead: To pass the test. NMT 2 µg/g.
Magnesium (as MgO): To pass the test. (about 0.4%).
Water-Insoluble Substances: To pass the test. NMT 0.2%
pH: 7.5–10.5, in a solution (1 in 10).
Water Determination: NMT 5.0%
Loss on Drying: Dry at 105C for 2 hr. Acceptance criteria: NMT 4%
Packaging and Storage: Store in tightly closed containers. No storage requirements specified.

DESCRIPTION
Calcium Propionate occurs as white crystals or as a crystalline solid. The pH of a 1:10 aqueous solution is between 7.5 and 10.5. One-gram dissolves in about 3 mL of water.
Function: Preservative; mould inhibitor.
REQUIREMENTS
Identification:
A. A 1:20 aqueous solution gives positive tests for Calcium.
B. Upon ignition at a relatively low temperature, a sample yields an alkaline residue that effervesces with acids.
Assay: Not less than 98.0% and not more than 100.5% of C6H10CaO4, calculated on the anhydrous basis.
Fluoride: Not more than 0.003%.
Insoluble Substances: Not more than 0.2%.
Lead: Not more than 2 mg/kg.
Magnesium (as MgO): Passes test (about 0.4%).
Water: Not more than 5.0%.
