Maltose also known as maltobiose or malt sugar, is a disaccharide. Like glucose, maltose is a reducing sugar. It has a sweet taste, but it is only about 30%-60% as sweet as sugar, depending on the concentration. As a food and beverage sweetener, there are many maltose uses. In addition to added sweetness, another function in food products is to provide added texture. High-maltose corn syrup is a food additive used as a sweetener and preservative. High-maltose glucose syrup is used as a substitute for normal glucose syrup in the production of hard candy, at a given moisture level and temperature, a maltose solution has a lower viscosity than a glucose solution, but will still set to a hard product. Maltose is also less humectant than glucose so that candy produced with high-maltose syrup will not become sticky as easily as candy produced with a standard glucose syrup. Another of Maltose’s uses is to preserve food. Maltose preserves food by inhibiting fermentation and bacterial growth.

DEFINITION
Maltose is a sugar. It contains one molecule of water of hydration or is anhydrous. It contains NLT 92.0% of maltose, calculated on the anhydrous basis.

IDENTIFICATION
A. Perform this test for Anhydrous Maltose only.
Sample solution: 50 mg/mL
Analysis: Add 2–3 drops of the Sample solution to 5 mL of hot alkaline cupric tartrate.
Acceptance criteria: A red precipitate is formed.
B. The retention time of the major peak of the Sample solution corresponds to that of the Standard solution, as obtained in the Assay.
C. Infrared Absorption: Perform the test for Maltose Monohydrate only. Use the undried sample and USP Maltose Monohydrate.
