Monosodium citrate or sodium dihydrogen citrate is an acid salt of citric acid. Disodium citrate and trisodium citrate are also known. It is highly soluble in water and practically insoluble in ethanol. Monosodium citrate is used as an anticoagulant in donated blood. It is an antioxidant with E number E331 (i). Monosodium citrate is a white, odorless, fine or crystalline granular powder with slightly acidic taste. It is easily soluble in water and practically insoluble in ethanol. It has a sour taste similar to citric acid, and is salty as well. It is often used as a food preservative, and as a flavoring in the food industry. In the pharmaceutical industry it is used to control pH. It may be used as an alkalizing agent, buffering agent, emulsifier, or as a strong sequestering agent. According to the FDA Select Committee on Generally Recognized as Safe (GRAS) food substances, citrate salts, including sodium citrate, are generally regarded as safe when used in normal quantities.
