Xylitol

Xylitol is a naturally occurring alcohol found in most plant materiallike fruits and vegetables. It is extracted from birch wood to make medicine. Xylitol is widely used as a food additive and sugar substitute and in "sugar-free" chewing gums, mints, and other candies. Its European Union code number is E967. Xylitol looks and tastes like sugar but has fewer calories and does not raise blood sugar levels. Some studies suggest that it improves dental health. Xylitol has about the same sweetness as sucrose, but more sweetness than similar compounds like sorbitol and mannitol. Xylitol is stable enough to be used in baking.

Acceptance criteria: Any turbidity in the xylitol flask is NMT that in the dextrose flask, in which a reddish-brown precipitate forms (0.2% reducing sugars, as dextrose).

DESCRIPTION
Xylitol occurs as white crystals or as a crystalline powder. One gram dissolves in about 0.65 mL of water. It is sparingly soluble in ethanol.
Function: Nutritive sweetener.

REQUIREMENTS
Identification: The infrared absorption spectrum of a potassium bromide dispersion of sample between two sodium chloride plates exhibits relative maxima at the same wavelengths as those of a similar preparation of USP Xylitol Reference Standard. If a difference appears, dissolve portions of both the sample and the reference standard in a suitable solvent, evaporate the solutions to dryness, and repeat the test on the residues.
Assay: Not less than 98.5% and not more than 101.0% of C5H12O5, calculated on the dried basis.
