Octyl Gallate is the ester of 1-octanol and gallic acid. It is a white powder with a characteristic odor. It is very slightly soluble in water and soluble in alcohol. As a food additive it is used under the E number E311 as an antioxidant and preservative. This antioxidant is used in numerous cosmetics and pharmaceutical, cosmetic, and food products such as soaps, shampoos, shaving soaps, skin lotions, deodorants, margarine, and peanut butter.

Determine the melting point of the substance to be examined. Mix equal parts of the substance to be examined and octyl gallate CRS and determine the melting point of the mixture. The difference between the melting points (which are about 101C) is not greater than 2C.
