Sodium Bicarbonate is micro encapsulated by coating it with hydrogenetaed vegetable oil like, cotton seed oil, palm oil or soybean oil. The encapsulation prevents the material from dissolving in the dough and emitting carbon dioxide. However, when heated, the coating melts and soda bicarb is dissociated to release carbon dioxide, at the right time. Good encapsulation can be achieved, by using 80% active and 20% coating.
It is extensively used in bakery industry.
