Calcium ascorbate

Calcium ascorbate or Ascorbic acid calcium salt or Calcium diascorbate is a compound with the molecular formula CaC12H14O12. It is the calcium salt of ascorbic acid, one of the mineral ascorbates. It is approximately 10% calcium by mass. As a food additive, it has the E number E 302. It is approved for use as a food in several countries. It is used as an antioxidant. Calcium ascorbate can extend the shelf life of food and beverage products and protect against deterioration of color, flavor, and overall quality. It is generally used as calcium ascorbate dehydrate.

Calcium di[(R)-2-[(S)-1,2-dihydroxyethyl]-4-hydroxy-5-oxo-2H-furan-3-olate] dihydrate.
Content: 99.0 per cent to 100.5 per cent of C12H14CaO12,2H2O.

CHARACTERS
Appearance: White or slightly yellowish, crystalline powder.
Solubility: Freely soluble in water, practically insoluble in ethanol (96 per cent).

C. Dilute 1 mL of solution S (see Tests) to 10 mL with water. To 2 mL of the solution add 0.2 mL of a 100 g/L solution of ferrous sulfate. A deep violet colour develops.
D. To 1 mL of solution S add 0.2 mL of dilute nitric acid and 0.2 mL of silver nitrate solution. A grey precipitate is formed.
E. The substance gives reaction (b) of calcium.

TESTS
Solution S: Dissolve 5.00 g in carbon dioxide-free water and dilute to 50.0 mL with the same solvent.
Appearance of solution: Solution S is clear and not more intensely coloured than reference solution. Examine the colour of the solution immediately after preparation of the solution.
pH: 6.8 to 7.4 for solution S.
Specific optical rotation: + 95 to + 97 (dried substance), determined using freshly prepared solution S.
Fluorides: Maximum 10 ppm.
Copper: Maximum 5 ppm.
Iron: Maximum 2 ppm.
Loss on drying: Maximum 0.1 per cent, determined on 1.000 g by drying in an oven at 105C for 2 h.

ASSAY
Dissolve 80.0 mg in a mixture of 10 mL of dilute sulfuric acid and 80 mL of carbon dioxide-free water. Add 1 mL of starch solution. Titrate with 0.05 M iodine until a persistent violet-blue colour is obtained.
1 mL of 0.05 M iodine is equivalent to 10.66 mg of C12H14CaO12,2H2O.

DESCRIPTION
Calcium Ascorbate occurs as a white to slightly yellow, crystalline powder. It is soluble in water, slightly soluble in alcohol, and insoluble in ether. The pH of a 1:10 aqueous solution is between 6.8 and 7.4.
Function: Antioxidant.

REQUIREMENTS
Identification: A 1:10 aqueous solution gives positive tests for Calcium, Appendix IIIA, and it decolorizes dichlorophenol–indophenol.
Assay: Not less than 98.0% and not more than 100.5% of C12H14CaO12·2H2O.
Lead: Not more than 2 mg/kg.
Optical (Specific) Rotation: Between +95° and +97°.
Oxalate: Passes test.
